While standing in line for other games, I watched the demo of Sly Cooper: Thieves in Time. I haven't really played any Sly Cooper, and have only seen a bit of the previous games, so I'll just talk about what I saw. As far as I understand the plot of the game, Sly works with his ancestors in this game. The main playable character in the demo was a knight raccoon, complete with helmet. He still attacked with the trademark cane, but I think he also had a sword to fight. The platforming mostly revolved around attaching to platforms and moving blocks with the cane to navigate the screens. These were full side views (like a 2D platformer). There was 3D platforming and fights. The odd part, to me, was the boss. For that, you take control of a fox lady (I think she's Sly's love interest/rival/something, she looks familiar) and you could shoot the multi-headed robot dragon boss. It took place in a short corridor with the boss at the end. It would shoot fire and missiles that had to be dodged and shot. After taking enough damage, there was a scene were the lady ran up and shot its eyeball, exploding the head and releasing the knight raccoon who was eaten. As I said before, I haven't played any Sly Cooper, but the shooting boss part seemed a bit out of place. Also I'm not sure how much sneaking the knight would do, so his section(s) might be more platforming/combat based. If it seems very "not Sly Cooper-y", just blame the devs.
